Caramel Cake
My husband has always raved about his Aunt’s Caramel Cake, but we’ve never gotten the recipe out of her. Yeah, she’s one of those cooks…her caramel cake will end with her. Too bad. Anyway, this is my attempt, and it came out pretty close, he says. I think it was a little on the sweet side. I’ll have to think of a way to make the frosting have more of a caramel flavor and not so sweet but still have it be light and creamy. … Read entire article »
Toasted Pumpkin Seeds
Being the frugal cook that I am, I try not to waste anything when I’m cooking. So whenever we’ve carved pumpkins in the past, I always roasted the seeds so as not to waste them. I was always disappointed with the result as they were never as good as the commercially bought ones. They were usually on the flat side, more chewy than crunchy, and were a pain to remove the shell. That is until I ran across this tip for toasting plump pumpkin seeds at Simply Recipes. The recipe suggested boiling the seeds first before roasting, and these came out deliciously crunchy! They were gone in no time and the girls were looking for more. So for about three cups of raw seeds that have been washed and cleaned of … Read entire article »

Carrot Soup
The cold has been at our house for the last few weeks, and when your throat is sore, there is nothing more soothing than a warm bowl of soup. I prefer something hot and sour but The Clone will go for anything soupy and creamy. This was her choice for lunch the other day. Out of the blue, she just said she wanted some carrot soup. I hadn’t made carrot soup before and I didn’t have time to look it up online or in a cook book, so I decided to make this one up as I went along. INGREDIENTS: 4 medium sized carrots, washed and chopped 1 small onion, chopped 2 cloves garlic, chopped 1 large stem of celery, chopped 1 Tablespoon Olive Oil 6 cups vegetable broth Salt & Pepper to taste Heat the Olive oil and … Read entire article »

Sauteed Bittermelon with Oyster Sauce
I still have a bunch of bitter melons in the fridge and I don’t want to freeze them as I just don’t think frozen bitter melon tastes good so I have been eating bittermelon once or twice a week. If you don’t know what bitter melon is, Momordica charantia is a tropical plant common in Southeast Asia. In the Philippines, it is called Ampalaya or Parya. Its bitter taste takes some getting used to. I love it. But then again, this is one dish that only I eat at our house. Husband has learned to eat it and will eat some with me. But the girls, I’m still working on them. … Read entire article »

Apple Cobbler
I am a lazy baker so any dish where you don’t fuss over beating things and sifting things is my kind of baking. I didn’t want to be bothered with pie crust so I thought I would just dump things in a dish and bake; that’s how I came up with this concoction which is a combination of a Clafoutis recipe from Essential Desserts and a French Apple Cobbler recipe from Southernfood.about.com. … Read entire article »
