The Perfect Birthday Cake

Today is my daughter Jade’s birthday so I was thrilled when I found out the recipe for my first Daring Baker’s Challenge! Yes, I joined the team of daring bakers to improve my baking skills which are practically nil I have to say that I was happy with the results considering this is my first attempt at baking for Daring Bakers. The Best Way to Cook Bacon

Bacon is one of our favorite breakfast items and we’ve had a love/hate relationship with it over the years. Some people in my household likes them extra crispy and some like them ‘just cooked but still soft’. Over the years, we’ve had more like burnt, too hard, or not cooked enough instead. There were bacon that shriveled and there were some that got tough as hide. The round skillets were also not very bacon friendly especially when you like your bacon straight up rather than bendy. When we discovered baking bacon, we were one happy family! Lamb Curry

Finally, here is the highlight of the Indian dinner, the lamb curry! Every time I go into Costco’s meat department, the lamb just keeps calling my name and I can’t go by without stopping to contemplate the things I could do with lamb. Spicy Marigold Rice

My family loves their steamed rice and hate raisins. So when they say that this is one of the best rice dishes they’ve ever had, you better believe it! You can see a peek of the Indian dinner we had last week. This dish is not only pretty to look at, it was aromatic and delicious as well. This was a perfect compliment to the spicy curry. The sweetness of the raisins is a perfect counter for any spicy dish. I made a great Indian Food dinner last weekend, if I do say so myself. I made a very strong, pungent and delicious curry and this yogurt condiment was perfect to cool it down with. The recipes and meal combination were from the All Around the World Cookbook by Sheila Lukins. Asi, my oldest daughter loved the cucumbers and tomatoes; she said it had a very refreshing taste. Chard in Coconut Milk (Laing)

This is not the first time I’ve cooked vegetables in coconut milk. I just love this combination, especially with greens that can withstand a slightly longer cooking time.
