Chard in Coconut Milk (Laing)

INGREDIENTS:
2 lbs of Swiss Chard, washed & chopped in 1 inch lengths
Several hot chili peppers (depending on how spicy you’d like it)
1 tablespoon oil
2 cloves garlic, chopped
1 large onion, chopped
2 cups coconut milk
Salt & Pepper to tasteIn a pot, heat the oil and saute’ the garlic and onions until fragrant. Add the rest of the ingredients and simmer until it looks like the photo below. The coconut and other liquids should almost be cooked away but not dried out.

hi jmom! i’m a big laing fan…specially spicy laing.
i haven’t ever tried to make one but it looks like i will be doing so soon.
i’ll come back for the other food like the puto and kutsinta. i’m having problems with my internet connection. it takes too long for webpages to upload.

hi munchkin mommy, I was having the same problem with slow loading on this site over the weekend. For some reason it binds up in Internet Explorer but not on Firefox. *sigh* unfortunately, I don’t know what the problem is. Hopefull I can figure it our soon.

I would LOVE to try this recipe, I love greens of all kinds, but I never seem to be able to find Swiss Chard. I look into every food store that I go into, but no luck.
However, I have printed the recipe and if ever I find some Swiss Chard, I’m trying this!

ah ok. JMom, meron ka ba recipe ng chili beans? A friend’s sister once cooked it for special occasions back in high school… the photo of the beans in one of your recipes reminded me of it.

It’s a very flexible recipe. You can change up the type of beans, omit the meat, make it spicier or less. You can make it anyway you like it.

This looks great - we both really like things cooked in coconut milk, and it’s a great way for us to get more green leafy things into our diet. I’ll definitely be making this sometime next week!

have this topped on rice and it’ll be gone before you could sa “da coconut nut”! hahaha… looks a bit like what my mom would cook with sigarilyas.
