Filbert Gateau with Praline Buttercream
As you all know, I’m trying to be a more daring baker, so here’s another attempt. Our hostess this month, Chris of Mele Cotte, chose to challenge us with: Filbert Gateau with Praline Buttercream. For me, this was a tad of a challenge not because of the recipe, but because of the ingredients. That’s one reason I had been putting off baking all month and finally buckled down at the last minute. Yep, I finished baking at 2 this morning I’m glad I’m not the only one who had the problem finding hazelnuts. The only hazelnut I saw at our local grocery store was hazelnut flavored coffee. I went to another store and they just happened to have some chopped hazelnuts, so I went ahead and got those in … Read entire article »

Recipes to Rival: Thank George’s Bank
This is the dish for July’s Recipes to Rival challenge chosen by our hostesses, Belita of Culinary Adventures and Lori of Lipsmacking Goodness. Recipes to Rival is a monthly food blogging event conceived in the spirit of The Daring Bakers where the host or hostess chooses a recipe and everyone in the group makes it and posts about the experience at a prearranged date. According to Belita’s introduction of the recipe, “Thank George’s Bank”, from The Black Dog Summer on the Vineyard Cookbook, “is to honor George’s Bank, a bank on the outer continental shelf of the Gulf of Maine.” This recipe consists of three parts, a fish cake base, poached egg and hollandaise sauce. We just happened to have grilled some trout for our Fourth of July cookout, so I … Read entire article »

Southern Corn Pudding
I’m not really happy about how this turned out, but it could have something to do with the quality of the fresh corn rather than the recipe. It just didn’t seem to be as sweet and flavorful as the last batch of Creamed Corn we made. I do like the texture of it though and will probably make this again as the rest of the family seemed to like it. This recipe is from The Fannie Farmer Cookbook by Marion Cunningham. INGREDIENTS: 2 cups fresh grated or chopped corn kernels 2 eggs, slightly beaten 2 tablespoons butter, melted 2 cups hot milk ½ teaspoon salt 1/8 teaspoon freshly ground pepper Preheat the oven to 350º F. Generously butter a 1½ quart casserole. Mix all ingredients together in a bowl. Pour into the casserole and place in a pan of … Read entire article »

Spinach Quesadilla
I got a call at work one day from Jade who asked if I’m coming home for lunch. I hadn’t really planned on it, but when she said she was making lunch, I jumped right on it. It’s against my principles to turn down a free lunch When I got home, this is what was waiting for me, prepared by chef Jade herself. The main attraction is the spinach quesadilla which she paired up with sliced of grilled steak and some cherry tomatoes with slivers of sweet onions. It was a delicious lunch which was just perfect for filling my hunger but not making me too sleepy to go back to work. Making quesadilla is very easy and my girls learned how to make them early on, as … Read entire article »

Ratatouille
I just found out about a new food blogging event called Recipes to Rival which is similar to Daring Bakers but for savory dishes instead of sweet. Recipes to Rival was founded by Lori of Lipsmacking Goodness and Temperance of High on the Hog. Sign up and visit the Recipes to Rival forum where the monthly challenges are announced, where you can get help making the recipes or just interact with other people who love cooking as much as you do. June’s challenge was for Confit Byaldi which is supposed to be the recipe used in the movie Ratatouille, which the girls and I just love. This was such a photogenic dish because of all the colors from the vegetables. This dish is our new favorite and with the zucchini and … Read entire article »

LaPiS #5 – SOUR
This is my entry for this week’s Lasang Pinoy Sundays, which features photos of Filipino foods or foods cooked up by Pinoys. This week’s theme is Sour. While some people shy away from strong tastes such as sour, we seem to be drawn to it. Why, even when something doesn’t seem quite good enough to eat, we fix it up by dousing it with something sour. The photo I am entering for this week’s theme is not super sour, it is actually more on the sweet side with just a touch of tang. This is Mangosteen and we tasted it for the first time when we went to the Philippines a couple of years ago. We had almost drove by the fruit stand when the girls asked what the purple fruit … Read entire article »
Yakitori – Grilled Skewered Chicken
I swear, I have been suffering from some major attention deficit lately. I’d start doing something, something catches my eye, I turn to it and before I know it, I’ve been distracted at number of times and I had forgotten what I had set off to do in the first place. In the meantime I had wasted a major chunk of time and never really accomplished what I set out to do. That’s kind of what’s been going on in this blog. I now have a back log of recipes that I’ve been meaning to post but just never got around to doing. I can’t regain time lost, but I can pick up where I left off, which is with the grilled chicken skewers I posted over a week ago … Read entire article »
