This week’s theme for Lasang Pinoy Sunday (LaPiS) is on a Stick. It’s time for festivals here in N.C. and the State Fair is in full swing. That could only mean one thing, food on a stick is king. Spicy Beef Stirfry with Basil

A quick and easy dinner like a stirfry is the working mom’s savior. I work five days a week and don’t usually get home until six o’clock in the evening. Some nights, when their homework isn’t too much, the girls would cook dinner or at least get it started for me. But most nights, especially on days when I have been more disorganized than usual, I may not even have a meat defrosted to cook. This is when it helps when you have smaller chunks of meat that can quickly defrost in the microwave. I have never been a big bread eater, at least not the loaf bread variety. I prefer breads with a little more body and preferably freshly baked. The Pica-Pica Collection

Pica Pica is this week’s theme for Lasang Pinoy Sundays a weekly food photo event showcasing mainly Filipino food. Pica pica simply means finger food or if you want to be fancy, hors d’oeuvre. Well, we’re never fancy around here and most of the time we use our fingers to eat any food anyway. So even though almost every dish here is finger food (my oldest daughter will eat with her hands (kamayan) every meal if she has her way), here’s a collection of what is traditionally considered to be finger food. Of course, you can’t talk about Filipino food without mentioning the lumpia… My daughters claim the Filipino lumpia is the best of all spring/egg rolls. Easy Baba Ganoush

This is the Easy Baba Ganoush recipe we made with the homemade tahini and to dip the lavash crackers in. Baba Ganoush is a dip made from roasted eggplants common in the middle east. Jade who loves Middle Eastern cuisine orders this with her koobideh all the time. The use of roasted eggplant in this dish reminds me of the Filipino Eggplant Salad but of course the flavors are totally different. If you have eggplants that you need to use up, as we did when the eggplants from our garden all came in at the same time, try both the eggplant salad and this baba ganoush.
