Easy Onion Rings – Slice it UP!

It’s been a crazy busy week at work last week and it will continue for two more weeks so I haven’t had too much time to cook much less post on the blogs. Luckily, my big girls have been such a big help in the kitchen and even remember to take photos for my food blog. Isn’t that nice? So this week, for Lasang Pinoy Sundays (LaPiS), I am offering up some easy peasy onion rings that my daughter SLICEd UP and cooked up all by herself. LaPiS: over the TOP

What could be better than bedding in a pillow of soft, white rice? If I were a viand, I would choose a bed of rice to lay on. That’s probably why most Filipino recipes end with “served on a bed of rice” or “serve with rice”; it just goes perfectly with almost anything! Pasta Primavera

There is nothing that says spring than fresh vegetables and what better way to welcome spring than a huge bowl of Pasta Primavera which simply means pasta with vegetables. From Essential Pasta Cookbook , this is what we had one night when The Clone was again begging for her favorite spaghetti. Since she was the one who chose the cookbook, I told her to look through it and choose another pasta dish to cook and she picked this one that had lots of vegetables in it. Great choice! LaPis: Shades of Spring and Summer

Spring for me always looks green. I love it when the early vegetables start showing up in the markets and in our backyard. This past weekend we picked all kinds of greens like collard, mustard and turnips that all grew by themselves as soon as the last frost melted away. I gathered enough greens for our dinner and a couple of bags for the freezer! That’s not a bad harvest from plants you didn’t even plant! This pasta dish is to celebrate the bounties of spring. The vegetables aren’t from my garden but they do always remind me of impending bounty from the garden. Coq au Vin

I’m a bit late posting since we had a minor emergency yesterday when I planned to put this post together and didn’t get a chance to finish it. First, the emergency: my daughter’s school called to let us know that she had gotten hit in the eye with a softball and that she was having trouble seeing. I rushed to the school expecting the worst and was pleasantly surprised to find that she wasn’t that badly hurt after all. I did end up taking her to the optometrist just to make sure her eye is ok. The eye was not damaged from getting hit, but she ended up needing glasses so we went ahead and got her fitted for one. She’ll get her first pair in a couple of weeks. … Read entire article »
