LaPis: Shades of Spring and Summer

Spring for me always looks green. I love it when the early vegetables start showing up in the markets and in our backyard. This past weekend we picked all kinds of greens like collard, mustard and turnips that all grew by themselves as soon as the last frost melted away. I gathered enough greens for our dinner and a couple of bags for the freezer! That’s not a bad harvest from plants you didn’t even plant!

This pasta dish is to celebrate the bounties of spring. The vegetables aren’t from my garden but they do always remind me of impending bounty from the garden.

I am a terrible housekeeper but I do love to cook so it all evens out in the end. I like to try new recipes that I think my family will like. However, I am not one to follow all recipes to the letter. I tend to tweak and change the recipes based on what I have on hand and how I am feeling at the time.     Ces, ‘plants I didn’t plant myself’ means they grew on their own from the seeds that fell off last year’s plant. They have been dormant all winter, then as soon as the sun popped out again, they just sprung up!

    We got a big kick out of that since we got a ‘free’ harvest 🙂 We are just now planting new seeds for this year. I’m still on the look out for ampalaya seeds, talong and sitaw. My okra and tomatoes are already in the ground. So is the squash. Hopefully by summer, I’ll have my pinakbet garden again.
