Mama Sita’s Spicy Chicken Caldereta

If you’re wondering who Mama Sita is, she’s not related to me. Mama Sita is a brand of mixes and sauces used to create Filipino dishes. They can be bought at most Asian markets that sell Philippine made products. When I was in Los Angeles last January for my grandmother’s funeral, my sister ordered a knock out dish of Kalderetang Kambing (stewed goat meat). I wanted to recreate the dish when I got home since I now know where to get some goat meat, thanks to the local Latino markets. Cornish Hens with Blueberry Citrus Glaze

You know how some dads specialize in grilling and manly types of cooking? My husband’s specialty are his cakes (pound cake and chocolate cake) and these Cornish hens. He would make these for us on special occasions like on Easter when we didn’t feel like the usual baked ham, he made these. This last batch, I made myself with a bit of coaching from him. In my usual fashion, I again used what I had on hand like the orange, lemon and lime that needed to be used up and the blueberries that were leftover from pancakes the previous day. Easy Carbonara

An easy and quick pasta dish is a staple in a pasta loving house like ours and nothing could be easier nor more comforting than pasta carbonara. You can have a bowlful in the length of time it takes for water to boil and pasta to cook. My daughter wanted spaghetti last week but I didn’t have time nor the inclination to make marinara sauce and we didn’t have any of the bottled variety in the pantry either.
