Cornish Hens with Blueberry Citrus Glaze

You know how some dads specialize in grilling and manly types of cooking? My husband’s specialty are his cakes (pound cake and chocolate cake) and these Cornish hens. He would make these for us on special occasions like on Easter when we didn’t feel like the usual baked ham, he made these.

This last batch, I made myself with a bit of coaching from him. In my usual fashion, I again used what I had on hand like the orange, lemon and lime that needed to be used up and the blueberries that were leftover from pancakes the previous day. Here’s my version which comes pretty close to my husband’s famed Cornish hens. Even the girls said it comes a close second :)

SAUCE
1 cup Citrus Juices – orange, lemon, lime
½ cup Apple Juice
½ cup Soy Sauce
1 cup Honey
1 teaspoon Lemon zest or strips
1 teaspoon Orange zest or strips
1 star Anise
1 piece dried Orange peel
¼ Blueberry Jam (optional – can use brown sugar instead if you don’t have jam)
¼ teaspoon red Pepper Flakes
1 stick Butter

Blueberry Citrus Sauce

Mix all the ingredients in a sauce pot and bring to a boil. Boil for ten minutes. Let cool. You will use this sauce to brush over the hens during baking.

Dry RubDRY RUB
2 Tablespoons Kosher Salt
1 teaspoon Garlic Powder
½ teaspoon Cayenne/Red Pepper powder

Set this aside. You’ll use this to rub on the hens before baking.

WILD RICE STUFFING
2 ½ cup Chicken Broth
2 cups Wild Rice Blend
1 Tablespoon Butter
1 Tablespoon flat leaf Parsley, chopped fine
1 egg, scrambled

Combine all the ingredients above except for the egg in a small sauce pan and bring to a boil. Lower the heat to low as soon as it comes to boil and cook for twenty minutes.

Add the scrambled egg

Stir up the rice and add the scrambled egg. The heat from the rice will cook it. Set it aside.

ASSEMBLY
Now that you have all your elements prepared, clean and wash your Cornish hens then dry them with a paper towel.

I used six Cornish hens for this recipe but you can adjust it to however many people you’re feeding. A half a hen is good for one person, but if they’re really hungry maybe they can finish a whole one ?.

Rub the hens inside and out with the dry rub mixture and place them on a baking pan. Next, loosely stuff each hen with the wild rice stuffing mixture. Truss them up (tie the legs together). After all, it is unseemly for hens to have their legs splayed apart. At least that’s what my grandmother always told me ;)

Take a half cup of the sauce (put it in a separate bowl) to serve with the hens later. Do this so you won’t cross contaminate it with the rest of the sauce which you will use to baste the hens as they bake.

Place the tray of stuffed Cornish hens in a 350 degree F oven where they will cook for 1.5 to 2 hours. Baste them with the sauce every 30 minutes until they are cooked and well glazed.
