My Best Apple Pie Yet!
I love apple pie! My favorite one is either Mrs. Smith’s dutch topped or Marie Calender’s deep dish Yeah, I’m not ashamed to admit it. I liked the frozen kind that you just pop in the oven kind. My previous attempts at making apple pie always ended up with filling that was too runny, undercooked, overcooked, cloyingly sweet or not sweet enough. And always, I always used the frozen pie crusts. I didn’t think it was worth the effort of rolling out your own dough and all that when you can buy perfectly good crust for a dollar and something. Make Ahead Lasagna
Inspired by Jane Doiron’s book, Make Ahead Meals for Busy Moms, I have been trying to be more organized and cook something ahead of time so that I’m not always so harried to get dinner on the table during the week. Some of the tips on the book are really helpful and I have started utilizing some of them including the one about freezing a pan of lasagna for another day. Make Ahead Meals for Busy Moms
I have a full time job outside the home, a busy husband and three very social teens so my schedule gets a little hectic sometimes. Sometimes it’s easier to just pick up some fast food and call it a meal. But we are not really all the crazy about eating fast-food all the time and eating out to a decent restaurant is not practical at all on our budget. So what’s a busy mom to do? Coconut Flavored Pork Stirfry
Because we’ve been enjoying the virgin coconut oil that we received from Tropical Traditions, I have been using it in almost every dish I cooked in the last week or two. This is one dish that was quickly put together on a weeknight and a delicious change from our usual stirfry dish. You can taste and smell the coconut oil but it’s not overpowering.
