LaPiS – Summer Salads

The Lasang Pinoy Sundays theme this time around is SUMMER SALADS! With our summer garden underway and with the scorching temperature and humidity making one reticent to fire up the stove, salads are definitely taking center place more often. This is one of our favorites just because we can readily make it with the pre-cooked and frozen shrimps. Of course for those who are allergic or just are not into seafood like my youngest daughter, you can easily substitute with chicken or beef or just omit the protein altogether. LaPiS – QUICK FIX

The theme for the current Lasang Pinoy Sundays is QUICK FIX. Pasta and noodles seem to be a common theme for quick fixes and so it is too in our house. This is my daughter’s quick fix for lunch, a dressed up version of the three minute ramen in a pack. LaPiS – CORN

I’m in a Meme-catch-up mood this week so I thought I would post this much over due post for Lasang Pinoy Sundays (LaPiS) since the next topic has not been announced yet. The theme for this Lasang Pinoy Sundays is CORN and it just so happened that I had just made Iska’s CORN, AVOCADO AND TOMATO SALAD with a few additions of my own. Here is what I had in my salad: Corn Avocado Tomato Summer Squash Sweet Vidalia Onions Curly Leaf Lettuce Like Iska, I dressed the salad simply with olive oil, lemon juice and a dash of kosher salt and freshly cracked black pepper. It was delicious just as it was but my other daughter has been obsessing with the Asian Salad dressing with toasted sesame seed and so she added some of that to her portion.
