Food Quote: HERBS

Better is a dinner of herbs where love is, than a stalled ox and hatred therewith. - Anonymous This is this week’s entry for the Food Quote Meme. I found this photo and I think it may have been a version of the creamy chicken and potatoes. But I lost my notes or just didn’t write any down thinking I would remember what I did when it came time to post. Anyway, back to the quote, it reminded me of my grandparents. They were farmers and they always said something similar; that no matter how simple the meal is, if you are sharing it with people you love and in harmony, it is much better than the best and fanciest meal around. And they were right. Fancy food does not always mean … Read entire article »

Cassava Rice Cake (Bibingkang Kamoteng Kahoy)

Have you ever found yourself wanting two things at the same time and wish that you could have them both? Well, in cooking you can do that! That’s what happened a couple of weeks or so ago when, while perusing my friend’s updates on facebook, I saw that she had made this yummy looking cassava cake. It looked so scrumptious, I wanted to lick it right off the computer screen! It helped that she’s also an awesome photographer, you understand. She’s been known to stir up intense cravings just from her photographs and musings of food. Well I wanted that cassava cake! I also wanted it the way she made it which was with small pieces of diced jack fruit. She said it just made the whole thing so … Read entire article »

Food Quote – DANISH

Today’s entry for the Food Quote Meme is related to the issue that dominated food bloggers on facebook this morning. Bloggers and particularly food bloggers do not take kindly to being plagiarized and today several blogger friends realized their content were stolen by another blog. I have never been able to understand how anyone can get any pleasure from claiming someone else’s work as their own; but I can understand when greedy people want to make money without having to work for it. That’s what most of these sites exist for. They steal your content, litter the search engines and profit from it. “It is better to suffer for truth than to prosper by falsehood” Danish Proverb quote I have seen superb food blogs and terrible food blogs. I would rather read the terrible … Read entire article »

Food Quote: SAUCE

“Woe to the cook whose sauce has no sting.” ~ Geoffrey Chaucer This is this week’s entry for the Food Quote meme. This is one of our favorites sauce especially during the summer time when we have an abundance of tomatoes from the garden. It’s a very basic and versatile sauce as you can change up the ingredients and proportions according to your taste or for what purpose you intend you use it. The bottom line is, it’s just plain ol’ salsa, nothing fancy; but don’t limit it’s use to just a dip for chips. There are so many ways to use it. The base for this is of course tomatoes. You can add garlic, onions, peppers and whatever herb you like. The obvious choice is cilantro, but you can also add … Read entire article »

Food Quote: CHILDHOOD

What is patriotism but the love of food one ate as a child? ~ Lin Yutang For me, nothing is more quintessentially Filipino nor more evocative of childhood than a bowl of icy avocado with milk, sugar and ice. The summer is just about over but when we made this avocado treat, it felt just like summer vacation all over again. This is the treat I grew up with and I still remember how refreshing it is on hot summer days. Now my daughters will remember their summers with treats like this too even though we’re not in the Philippines. And even though they’ve only visited the Philippines once, they still consider themselves Filipino because they grew up eating the Filipino way and learned some of their culture and heritage through … Read entire article »

Easy Creamy Tomato Soup

This was today’s lunch, at the request of The Clone (my youngest daughter). We still have lots of tomatoes coming in from the garden and we have a huge bowl of them on the table. We have sliced tomatoes or salsa with almost every meal and still, it seems like we’re not making a dent on the pile as more are added on every time we use some up. So for lunch today, we decided to make soup. This is such an easy recipe, it can be cooked in 30 minutes including prep time. There is so much flavor in the tomatoes that so little seasoning is needed. The salt I added to this was a mere dash. If you choose not to add any salt, you probably won’t even … Read entire article »

Easy Hot Pepper Relish

We have two cayenne pepper plants in our garden this summer and they have been most prolific. I already have jars full of pickled peppers in the pantry, I’ve given bags of them away, and still we come in with a bowl full of them everyday! So just to mix it up a bit, I decided to make some into relish. As I was searching online for recipes and methods of making relish, I decided I didn’t really have that much energy to be doing all that chopping and canning. So I decided to go with the quick and easy method and forego the canning. This relish can be stored in the refrigerator for weeks, even months since it is acidic enough that nothing will grow in it. But this relish, … Read entire article »
