Cassava Rice Cake (Bibingkang Kamoteng Kahoy)
Have you ever found yourself wanting two things at the same time and wish that you could have them both? Well, in cooking you can do that! That’s what happened a couple of weeks or so ago when, while perusing my friend’s updates on facebook, I saw that she had made this yummy looking cassava cake. It looked so scrumptious, I wanted to lick it right off the computer screen! It helped that she’s also an awesome photographer, you understand. She’s been known to stir up intense cravings just from her photographs and musings of food. Well I wanted that cassava cake! I also wanted it the way she made it which was with small pieces of diced jack fruit. She said it just made the whole thing so … Read entire article »
Easiest and BEST Banana Bread Recipe
This is the easiest and best Banana Bread recipe we have concocted YET! Why do I love it? First, it’s easy. It’s all mixed by hand so no need to take out the mixer. Just get a big spoon and a mixing bowl and you’re ready to go. For a lazy baker like me, it’s perfect! Here is the recipe I used, culled from several that I’ve tried before and others found on the internet. By the way, I made this again this past weekend because we had some bananas that have passed their prime. I was on a lazy mode and didn’t even bother to use measuring cups or spoons. Just eyeballed everything and it still came out terrific! INGREDIENTS: 3-4 cups ripe Banans, smashed 1/3 cup melted Butter 1 cup Sugar 2 Eggs, beaten ½ … Read entire article »
Banana-Cardamom Cupcakes with Cream Cheese Frosting
This Banana-Cardamom cupcake recipe was found this on the Cook Worm’s blog. Now you know how I like to make banana bread to use up old bananas. Well when I saw this recipe I just knew I had to try it the next time I had a surplus of bananas. Well, I didn’t have to wait too long. I got my bananas and got to work on these beauties. I knew before I even started cooking that these were going to be a hit in our house, what with the cream cheese frosting and all. It turned out, they also liked the cake part! They even like the cardamom flavor instead of cinnamon! As for me, I think I may have been eating too much curry because I can barely taste … Read entire article »

DH Banana Cake with Caramel Sauce
I can’t believe it’s been years now since a blogging friend sent me the Donna Hay Modern Classics Book 2 cook book. While I have never been much of a baker, I found this book to be inspirational and has been a great motivator to get me baking. We love making banana bread muffins from over ripe bananas but this banana cake recipe from the Donna Hay cook book looked interesting so I decided to try it. Plus, who can resist caramel sauce, right? This turned out to be simply fantastic. It was gone in no time and surprisingly, it was good even without the caramel sauce which was the selling point for me to begin with! … Read entire article »

Dared to Bake: Cafe au Lait Cheesecake with Caramel
The April 2009 challenge is hosted by Jenny from Jenny Bakes. She has chosen Abbey’s Infamous Cheesecake as the challenge. According to Jenny, her friend Abbey T. has tweaked this recipe to it’s now almost perfect state. The basic cheesecake recipe is adaptable to various flavors so you could be making this cheesecake for a long time if you want to try out all the flavors. For my version, I went for the coffee cheesecake with caramel topping otherwise known as Cafe’ au Lait Cheesecake with Caramel. Visit the Daring Baker website for the original recipe with the different flavor suggestions. Here is my version (my notes, as always, in red). … Read entire article »

Cranberry & White Chocolate Cake
This cake is also from the Southern Living Christmas book that we got the Charlotte Russe recipe from last year. Our decorating job wasn’t as pretty as the book, but the cake was really delicious and moist. The girls had a great time decorating the cake though. I poured the white glaze on and they did the rest. I think I just might make the cake again this year but serve it without the frosting as it got kind of sweet. Maybe serve it with a side of cranberry orange compote if we want added sweetness. Click on the link below for the recipe. It’s really quite easy. … Read entire article »
Filbert Gateau with Praline Buttercream
As you all know, I’m trying to be a more daring baker, so here’s another attempt. Our hostess this month, Chris of Mele Cotte, chose to challenge us with: Filbert Gateau with Praline Buttercream. For me, this was a tad of a challenge not because of the recipe, but because of the ingredients. That’s one reason I had been putting off baking all month and finally buckled down at the last minute. Yep, I finished baking at 2 this morning I’m glad I’m not the only one who had the problem finding hazelnuts. The only hazelnut I saw at our local grocery store was hazelnut flavored coffee. I went to another store and they just happened to have some chopped hazelnuts, so I went ahead and got those in case … Read entire article »
