Chicken Escabeche
This came about because I couldn’t decide what to make and I was tired and wanted something quick and easy. So at first I was considering making soft tacos with the chicken thighs and maybe make salsa. But I really wanted some rice. And I know the husband would feel more full with rice than with tortillas. Before I even made up my mind, I started preparing the ingredients, pulling them out of the fridge, the … Read entire article »
Chicken Afritada – Chicken Stew
This is based on the Filipino Afritada recipe which my family has gotten to simply calling chicken stew. Which, basically, is what it is. I like it because, well, you can only have fried chicken so often (their favorite), and this has both starch and vegetables and a hearty gravy all in one pot so it’s perfect for a quick and healthy weekday meal! You can pair it with rice as is our wont, or … Read entire article »
Lettuce Wrapped Chicken
This is an update to an old recipe which is a favorite in our house especially once the weather starts getting too hot to cook inside or out. It hasn’t got that hot yet though, the weather has been still pleasantly comfortable. Yet whenever I try to think of something light, refreshing and still filling, this recipe comes to mind. My husband does not bother with the lettuce cups or lettuce tacos as he calls it. … Read entire article »
Chicken in Puttanesca Sauce
I do love to cook, and I do love to try out new things. Lately though, it’s been a stretch to accomplish either of those things. I guess you can tell from the frequency of my food posts. Take for instance, chicken. I have been having such a love/hate relationship with chicken especially as some people in my house think that chicken should almost always be fried. Well I couldn’t stand to fry another damned chicken … Read entire article »
Chicken Stewed in Coconut Milk
My wandering blogger friend Sha posted this recipe on facebook and I just had to try it. I had all the ingredients on hand, and the process was easy enough for a weekday meal, so why not? This was a very tasty dish and my family love it! Their verdict? “It’s like chicken curry without the curry!” LOL! Leave it to them to sum up a seemingly exotic dish with one pronouncement! : Chicken Stewed in … Read entire article »
Arroz Caldo – Chicken Soup with Rice
All the rich foods of the holidays, and having a snowy after-Christmas morning had me yearning for something simple and comforting. I had cooked a very plain version of this dish for my sick daughter a couple of weeks ago. It was more plain rice porridge than what we Filipinos recognize as Arroz Caldo or Lugaw or Congee, no matter how it is called. The rice soup we know is usually adorned with a multitude … Read entire article »
Tinola: Chicken Soup for the Pinoy Soul
I had been looking forward to updating my tinola soup photo for a long time. See, when I first posted my Tinola recipe, I didn’t have any of the traditional vegetables to go with it. I had to make do with what I had (what my grocery store had) which was cabbage and bok choy. Any vegetable will work with this recipe, actually as evidenced by the pink version where I used an even more … Read entire article »
Grilled & Ready Chicken GIVEAWAY
Technically, it’s spring time in the Carolinas but already we’ve had some summer like weather that made us want to pull out the grill. We’ve been so busy working on the garden though that we haven’t had time to pull out the grill and get some charcoals. Luckily, I was asked to review this Tyson Grilled & Ready Chicken which comes pre-cooked and can be found in the freezer section of the grocery store. I got the plain grilled but they also come in other flavors like Southwestern and Fajita chicken. If chicken is not your thing, they also have the Grilled and Ready Seasoned Beef Strips. I was going to try and dress it up but my always hungry daughters came home from school one day and found these in … Read entire article »
