Condiment: Miso Dip

Condiment: Miso Dip

I liked it well enough when I tried the Pesa recipe from the Overseas Pinoy Cook, but this ‘dip’ as he called it just blew me away! I am not one to be overly effusive about anything, but I have to say this dip or condiment (however you wan to call it), is fantastic! I have since used it with other dishes and loved it every time. BTW, if you have a pasta lover in … Read entire article »

Easy Hot Pepper Relish

We have two cayenne pepper plants in our garden this summer and they have been most prolific. I already have jars full of pickled peppers in the pantry, I’ve given bags of them away, and still we come in with a bowl full of them everyday! So just to mix it up a bit, I decided to make some into relish. As I was searching online for recipes and methods of making relish, I decided I didn’t really have that much energy to be doing all that chopping and canning. So I decided to go with the quick and easy method and forego the canning. This relish can be stored in the refrigerator for weeks, even months since it is acidic enough that nothing will grow in it. But this relish, … Read entire article »

Nakano Prize Package Giveaway & Recipes

We had a new salad favorite at our house this summer when we first tried the Corn Avocado and Tomato Salad. That’s why when I got a chance to try out NAKANO Seasoned Rice Vinegars, I knew that this salad would be one of the first I would try it on. The original recipe for this salad simply called for a lemon and olive oil dressing. This time around, I decided to add a little Asian twist to it. For the vegetables that you use, you can vary them up as I did but the main ingredients are of course, CORN, AVOCADO AND TOMATO SALAD with an Asian Twist … Read entire article »

Fried Garlic

There is nothing better than fried garlic to kick things up a notch. This is heaven on earth for garlic lovers. If you’re a garlic lover, you’re probably an old pro at frying them up. They are a great topping for just about anything savory. When I’m in a garlic peeling and chopping mood, I usually chop up extra to fry up and use as a topping. There’s really no recipe for this, all you have to do is peel and chop up some garlic, heat up a bit of oil and fry them up until they are lightly browned and crispy. Drain them on paper towels to get rid of excess oils then use them to sprinkle on everything from salads to soups. I particularly like sprinkling fried garlic … Read entire article »

Raita

I made a great Indian Food dinner last weekend, if I do say so myself. I made a very strong, pungent and delicious curry and this yogurt condiment was perfect to cool it down with. The recipes and meal combination were from the All Around the World Cookbook by Sheila Lukins. Asi, my oldest daughter loved the cucumbers and tomatoes; she said it had a very refreshing taste. I loved the layers of flavors in this and the other dishes in the meal. Recipes for the curry and rice will follow. … Read entire article »

Purple Basil Syrup

Along with sweet basil, we also have a few very lush purple basil plants. So when I saw this recipe for Purple Basil Syrup on Calendula & Concrete, I knew I just had to try it. It is a perfect way of enjoying the pure flavor of purple basil. Start out by getting about a cup worth of chopped purple basil (packed). Place basil in a saucepan along with 2 cups of water, 1 cup of sugar, and 2 Tablespoons of lemon juice. Bring this to a boil. I let this boil until the liquid was reduced to about half. If you have a candy thermometer, you can also monitor the temperature until it gets to the syrup stage which on mine is about 230 degrees F. Remove from the heat … Read entire article »

Guacamole

We love cooking and eating Mexican food, and guacamole is one of our favorites either as a dip or as an accompaniment to any Mexican dish. However, we have also gotten into the habit of making it every time we cook out on the grill. It just pairs up well with grilled meats. This is a very simple version, and I find it works best with picky kid palates. 2-3 avocadoes, peeled, seeded and coarsely chopped1 lime, juiced2 roma tomatoes, seeded and diced fine1/2 teaspoon salt1/2 teaspoon garlic, finely minced and mashed2 tablespoons cilantro, chopped Mix all ingredients together, slightly mashing the avocado in the process. We like to leave some avocado chunks in our guacamole. Great to dip tortilla chips in or just a condiment for grilled meats. … Read entire article »
