Curry Noodles

We had this as a quick weekday meal last week. Whether you have it over rice or noodles, it’s delicious in either case. I also realized, just before I started cooking, that I was out of coconut milk which is what I usually use when I make chicken curry. Even without the coconut milk, it was still delicious. The family decreed that it tasted different but was just as good.Having it over rice noodles is what made this dish special. The green beans and the summer squash were from our garden. Pork & Vegetables Curry

Curried dishes is a big favorite in our house thus it has also become a standby dish. When we can’t think of anything to cook, we start pulling things out of the refrigerator, add curry and presto! Lamb Curry

Finally, here is the highlight of the Indian dinner, the lamb curry! Every time I go into Costco’s meat department, the lamb just keeps calling my name and I can’t go by without stopping to contemplate the things I could do with lamb. Fish Curry

Tired of turkey? We are, so something decidedly different in flavor in texture is in the works. We cooked this batch of fish curry sometime ago, but we’ll be duplicating this tonight. I had thought I posted this already, but when I came back to my blog to check the recipe, I realized I hadn’t posted it yet! So here, I’ll revisit the recipe with you. This recipe is probably not very authentic, actually it is NOT authentic anything, but it is another way of using up the vegetables we have from the garden. Even the potatoes were from our garden, I’m proud to say. I was in my iron chef mode again and started pulling stuff from the refrigerator and the pantry and this is what I came up with. Curried Pork

This is my version of curried pork, which I cooked when the girls and I had a taste for a stir fried dish with plenty of vegetables. I had to cook a meat dish for my husband, who had to have meat with every meal. Not the small amount of meat in stir fried dishes, but a real meat dish, where you can see pieces of meat.
