Because we’ve been enjoying the virgin coconut oil that we received from Tropical Traditions, I have been using it in almost every dish I cooked in the last week or two. A quick and easy dinner like a stirfry is the working mom’s savior. I work five days a week and don’t usually get home until six o’clock in the evening. Some nights, when their homework isn’t too much, the girls would cook dinner or at least get it started for me. But most nights, especially on days when I have been more disorganized than usual, I may not even have a meat defrosted to cook. Chicken and Mushrooms in Spicy Oyster Sauce

This was another happy accident that came about when I couldn’t decide what to make for dinner, didn’t feel like looking for a recipe to try, and was just plain tired of the usual fried and baked dishes. I had some of the boneless and skinless chicken thighs in the freezer so I decided to simply stir fry them with some chinese broccoli. However, as I started chopping the ingredients, I changed my mind midway and decided to cook them as separate dishes. The broccoli, I simply pan friend with olive oil and garlic.
