Some people find it strange that I treat avocado more as a dessert than as a vegetable to garnish salads. Growing up in the Philippines, we always had avocado for dessert. It is commonly mixed with sugar and milk, and with a bit of ice, it becomes a refreshing snack or dessert. One of the simplest ways of consuming avocado came from my grandmother and it’s a favorite of mine when I need something quick and refreshing to snack on. The summer is just about over but when we made this avocado treat, it felt just like summer vacation all over again. The Avocado League Blog Tour
I have been searching for inspiration for an original avocado recipe since I got notice for the Avocado League Blog Tour. But really, how original can one get with an ingredient that, in my opinion, is best consumed fresh and uncooked? I truly love avocado in all it’s fresh glory. I just can’t imagine subjecting its natural freshness and unctuousness to heat. It just seems so against nature. LaPiS – CORN
I’m in a Meme-catch-up mood this week so I thought I would post this much over due post for Lasang Pinoy Sundays (LaPiS) since the next topic has not been announced yet. The theme for this Lasang Pinoy Sundays is CORN and it just so happened that I had just made Iska’s CORN, AVOCADO AND TOMATO SALAD with a few additions of my own. Here is what I had in my salad: Corn Avocado Tomato Summer Squash Sweet Vidalia Onions Curly Leaf Lettuce Like Iska, I dressed the salad simply with olive oil, lemon juice and a dash of kosher salt and freshly cracked black pepper.
