Starry Tomato Soup with Meatballs
My daughter loves soup. If you’re a regular reader of this blog, you’ve probably figured this out already based on the number of soup recipes. She particularly loves pastas and not too long ago, she wanted spaghetti and meatballs. Homemade meatballs, she specified. I figured if I’m going to make meatballs, might as well make some extra and freeze them for later use. So when she had a hankering for some soup, we luckily still had … Read entire article »

Food Quote: BREAD
“All sorrows are less with bread. ~Miguel de Cervantes, Don Quixote” Summer is winding down and the last of the tomatoes are getting ready to be taken off the vine before the frost gets them. It doesn’t mean that we can’t have a last taste of summer though. This bruschetta was perfect for a light supper when I was too tired to cook, paired with a yummy tomato soup. This is this week’s entry to the Food Quote Meme. … Read entire article »

Food Quote: SAUCE
“Woe to the cook whose sauce has no sting.” ~ Geoffrey Chaucer This is this week’s entry for the Food Quote meme. This is one of our favorites sauce especially during the summer time when we have an abundance of tomatoes from the garden. It’s a very basic and versatile sauce as you can change up the ingredients and proportions according to your taste or for what purpose you intend you use it. The bottom line is, it’s just plain ol’ salsa, nothing fancy; but don’t limit it’s use to just a dip for chips. There are so many ways to use it. The base for this is of course tomatoes. You can add garlic, onions, peppers and whatever herb you like. The obvious choice is cilantro, but you can also add … Read entire article »

Easy Creamy Tomato Soup
This was today’s lunch, at the request of The Clone (my youngest daughter). We still have lots of tomatoes coming in from the garden and we have a huge bowl of them on the table. We have sliced tomatoes or salsa with almost every meal and still, it seems like we’re not making a dent on the pile as more are added on every time we use some up. So for lunch today, we decided to make soup. This is such an easy recipe, it can be cooked in 30 minutes including prep time. There is so much flavor in the tomatoes that so little seasoning is needed. The salt I added to this was a mere dash. If you choose not to add any salt, you probably won’t even … Read entire article »

LaPiS – CORN
I’m in a Meme-catch-up mood this week so I thought I would post this much over due post for Lasang Pinoy Sundays (LaPiS) since the next topic has not been announced yet. The theme for this Lasang Pinoy Sundays is CORN and it just so happened that I had just made Iska’s CORN, AVOCADO AND TOMATO SALAD with a few additions of my own. Here is what I had in my salad: Corn Avocado Tomato Summer Squash Sweet Vidalia Onions Curly Leaf Lettuce Like Iska, I dressed the salad simply with olive oil, lemon juice and a dash of kosher salt and freshly cracked black pepper. It was delicious just as it was but my other daughter has been obsessing with the Asian Salad dressing with toasted sesame seed and so she added some of that to her portion. I … Read entire article »
Opo Squash in Tomato Sauce
After all the rich foods from the holidays, we all crave for something simple and comforting. Something that can be whipped up without a lot fuss with ingredients we already have on hand. This dish used up the last of our tomato harvest. Yep, believe it or not, we just finished up the last of our fresh tomatoes and it’s January! How did we still have tomatoes that weren’t frozen this late after the last of the summer garden? Green tomatoes. HOW TO RIPEN GREEN TOMATOES Back in October, before the first frost of the season, we harvested all the tomatoes from our garden. The ripe ones, were either made into tomato sauce and frozen or simply washed, dried and frozen whole. The green ones, (the smaller cherry tomatoes) were made … Read entire article »
